The Swiss consume around 10 kilograms of chocolate per person annually, although a share of that is bought by tourists and cross-border shoppers. Germany, Austria, Norway and the United Kingdom also rank near the top, each eating about 7 to 9 kilograms per person. Switzerland shaped modern chocolate: Daniel Peter created milk chocolate there in 1875 with help from Henri Nestlé, and Rodolphe Lindt invented the conching process in 1879, which made chocolate smooth. Yet the cocoa itself is grown far away, with Ivory Coast and Ghana producing around 60 percent of the world’s cocoa beans. The global chocolate market is worth over 100 billion dollars a year.
